Trio of sorbets. Three yummy frozen treats that toddlers can eat.

Having Bailey has made me adjust lots of recipes so we can all eat the same foods. Rather than eat loads of crap over Christmas (which may have been OK for us to do in the past), I tweaked some recipes and we all enjoyed some yummy, nutritious treats. The dessert was the standout for her, it was her first try of sorbet or ice cream, and first taste of chocolate.. Needless to say, she enjoyed it!!

To make the sorbets-

CHOC-ALMOND> 1 cup cocoa, 1/2 cup xylitol, 2 cups water, 1 tsp vanilla, 1 Tbsp beetroot powder + 1 cup almond meal. Bring everything to boil except almond meal. Cool. Churn in ice cream maker 25mins, add almond. Churn 10mins. Freeze.

BANANA-NECTARINE> 2 bananas, 1 nectarine, 1 Tbsp coconut butter, 1 Tbsp vital greens, squirt of stevia, 1 tsp yakon syrup, 2 cups rice milk. Blend til smooth. Chill. Churn. Freeze.

MIXED BERRY> 2 cup frz mixed berries, juice of 1 lemon, 1/4 cup xylitol, 1 cup water. Puree til smooth, pass through a sieve, churn, freeze.

They go quite hard when frozen, so take out 10 mins before you want to serve so they soften a bit. To make nice smooth balls, dip your scoop into boiling water between each ball. Enjoy with some fruit on the side. (I made mango and peach “christmas trees”) For the adults, there was a rum and raisin puree underneath the choc sorbet.

And of course, you don’t need to eat all three together to have a special treat, they are amazing all by themselves!
